L'Arcolaio, a type B cooperative founded in 2003, promotes the employment of prisoners in the Siracusa District Prison. In the bakery, whose production is mainly intended for the local market, the Dolci Evasioni brand was born, with delicious gluten-free and organic Sicilian sweets. This loving crew of pastry chefs in prison provides sweets throughout Italy, thanks to shops, boutiques, and Solidarity Purchasing Groups. In 2008, L'Arcolaio also launched a social agriculture mission in the Iblei Mountains, providing training and work to young immigrants, people released from prison, and other people in need, trying to enhance the cultural and natural characteristics of the area and providing a contribution to building ethical supply chains and relationships with the community.
