Salicornia, also known as “sea asparagus”, is a plant that grows on the seashore, on rocks or near salt water pools. This one in particular grows in Gargano and is preserved as per tradition in extra virgin olive oil by the Buondioli family. It is an excellent ingredient in salads or in first and second courses, especially fish-based ones. A tip: given its saltiness, remember to use a minimum amount or avoid salt altogether. It is available in a 212g glass jar.
