To obtain split green peas, we start with whole green peas, grown exclusively with traditional and organic methods and with respect for nature. At the Perle della Tuscia company, they use a mechanical process to proceed with the decortication and therefore the removal of the outer skin. With this method, none of the fundamental nutritional principles of the legume are eliminated, nor the aspect that remains green. The dense and sweet pulp, rich in proteins, fibers, mineral salts and low in fat, does not require soaking and cooks in just 40 minutes. With the decortication, these peas are more digestible than whole ones, which is why they are suitable for both children and the elderly.
