Black chickpeas are an excellent food rich in proteins, starch and mineral salts and a rich source of raw fiber. The skin is wrinkled, irregular and black in color. Their intense flavor also makes them perfect when simply cooked and seasoned with good extra virgin olive oil. I recommend soaking them for at least 36 hours and cooking them for up to 60-90 minutes. If you use a pressure cooker, 40 minutes will be needed from the start of the whistle. These chickpeas are produced exclusively in the Alta Tuscia Viterbese area, grown in open fields and by local farmers. They are available in 400g bags.
