If you don't know how to prepare it, I do it like this:
In a pan, brown the guanciale cut into cubes. Keep it on the heat until you see the fat that has changed from white to golden. When it is ready, remove only the guanciale cubes and leave the oil in the pan. Pour the passata and let it cook for about 5-10 minutes on medium heat. If necessary, add salt, but in general the guanciale is already very tasty. Put a pot of water on the stove and cover it with a lid. When it boils, cook the pasta (usually 80g-100g per person is enough) and wait for the minutes of cooking. Drain the spaghetti and put them in the pan with the sauce. Add the browned guanciale and sauté everything for a couple of minutes. Serve the dish hot with the previously grated pecorino cheese or directly on the plate. |
