To prepare this traditional Roman dish you really need very few ingredients, as the recipe says: just cacio e pepe! In fact, you will only need 200g of grated Pecorino 100g and enough organic black pepper powder to create this truly sublime condiment and amaze your guests.
If you don't know how to make it, I do it like this:
After putting the pasta in the cooking water, add salt to it. I recommend using short pasta, such as rigatoni or tortiglioni. In a bowl or deep plate, grate the pecorino and start mixing it with the salted cooking water that you will have to add little by little. Once you have created a sort of cream, also add the pepper. Drain the pasta and quickly transfer it to a low saucepan, mixing it with the pecorino cream. If necessary, add more cooking water to ensure that the sauce remains creamy and smooth. |
