The organic dried Shiitake mushroom, Suolo&Salute certified, by Natural Funghi is grown by monitoring growth parameters daily. Furthermore, it has anti-inflammatory and antibacterial properties. I recommend that you soak it first in warm water for at least 30 minutes, then squeeze it and add it to the cooking. The soaking water can be reused as cooking broth. Excellent in soups and risottos.
