    The birth of Kekoji Lab in 2022 is the result of Davide Belli's innovative idea to create foods from the Eastern tradition, revisited using local ingredients. He was inspired by what is different and unknown in our tradition, discovering instead that these two worlds, apparently opposite, can meet perfectly. Simple food combined with a lot of creativity. The founder strongly believes in the healing power of nature and in the need to minimize food waste. He does this by following the seasonality of the products and giving preference to local raw materials and traditional varieties of the territory, but above all by collaborating with local companies that share the same values. Starting from a particular fermentation of rice, Koji is obtained, the basis of the products in the catalog: alternatives to soy sauce, artisanal miso, garlic and black lemons and many other proposals. The company also stands out for its sustainability values, with particular attention to the recycling of waste products.
