The Famiglia Cooperativa Cavalese was founded in 1896 and only later, in 1953, the initiative to roast Caffè Cavalese was born. The spirit of cooperation from the beginning has remained the same: commitment to the community and service to the territory. Today they are the only retailers of the "Caffè di Anterivo", which has returned to popularity, thanks to a major research effort carried out in Alto Adige. Here, in addition to the two varieties of lupins, used as a coffee substitute, the white lupin Lupinus albus and the lupin with hairy leaves, or the "Caffè di Anterivo", Lupinus pilosus , there is also another variety, the blue lupin, Lupinus angustifolius from Cavalese, which was used to produce the so-called "caffè del campo". The project was born with the aim of bringing back to life an ancient cultivated plant, deeply linked to local history and knowledge. The "Caffè di Anterivo" is in fact part of the collective memory of the country, so that this local art can continue to be preserved.
