White chickpeas are a real delicacy. Rich in proteins, starch, mineral salts and fibre, these precious legumes are a true peculiarity of Alta Tuscia Viterbese. They have been renamed "crunchy" because, once cooked, they maintain a compact and almost crunchy consistency. Soak them for at least 8-10 hours and then cook them for 60-80 minutes or in a pressure cooker for just 40 minutes. Available in 400g bags.
