It is an ancient and prized black variety, very small in size, grown exclusively in open fields by local farmers in the areas of Alta Tuscia Viterbese. Rich in proteins, starch, mineral salts, raw fibers and iron with powerful antioxidant properties. They do not require soaking. I recommend cleaning the legumes, passing them several times under running water, putting them in cold water and cooking for a maximum of 15 minutes. Please note: do not salt the lentils during boiling otherwise the skin will split and the pulp will remain hard!
